Prosciutto Castello - Austrian Premium raw ham

A premium raw ham, handcrafted from strictly-selected Austrian pork thighs. Refined with pure sea salt. Air dried and aged for at least 14 months. Mild and especially tender.

Strictly-selected pork thighs are handpicked from precious pigs from Carinthia and Styria.

The quality criteria with regards to breed, fodder, weight, intramuscular fat and Ph-values are so strict that only six to eight out of 100 hams are selected. The subtle difference is the feeding of the pigs which takes longer than usual. So the pigs become fatter and fat is as an important flavour carrier.

Then they are massaged with pure sea salt. For at least 14 months the Prosciutto Castello is air dried and ages on the bone in the clear mountain air of the Gegend valley, where cool mountain breezes meet the mildly-moist air of the near lake. Prosciutto Castello is perfectly-marbled and tenderly-creamy. It melts wonderfully on the palate with its slightly-sweet notes, reminding aficionados of precious chestnuts.

TIP: For a special indulgence! Magnificent as part of an antipasti plate, on special delicatessen trays or with feta cheese on a leafy salad. Ideal as a refined ingredient in the kitchen! Give it a try: Parmesan cream soup with Prosciutto Castello or grilled chicken breast filled with Prosciutto Castello.

The Frierrs’ family maintains a prosciutto tradition of the highest level.  

Frierss’ Prosciutto Castello is among the best in the world and as a result is exported all the way to Japan. The nearness of the family business to Italy and our grandfather’s passion for all things Italian were the origins of our prosciutto production.

For over 35 years experienced prosciutto craftsman have been producing our first-class Prosciutto Castello in our cured ham factory in Treffen, close to Villach. “Prosciutto Castello” (commonly known as “Carinthian Castle Ham”) owes its name to its original aging site: the Castle of Treffen.

 

What makes Frierss’ Prosciutto Castello so special?

A premium cured ham from Carinthia, handcrafted from strictly-selected pork thighs from Austria, pure sea salt, and otherwise nothing. Aged for at least 14 months. Mild and tender.

  1. Only strictly-selected pork thighs are handpicked from free-range pigs of Carinthia and Styria. Breed, fodder, weight, intramuscular fat and Ph-values are closely examined. Only 6 to 8 out of 100 hams are approved for Prosciutto Castello.

  2. The prosciutto craftsmen carefully massage the pork thighs by hand with pure sea salt. This procedure requires a lot of experience, as salt traditionally was used only very sparingly. Through this method, the prosciutto remains 100% natural and its distinctive taste remains unaltered.

  3. The secret to the special taste lies in the long maturation time. For at least 14 months the Prosciutto Castello ages on the bone in the clear mountain air of the Gegend valley, where the ideal conditions are just right for natural air-drying. During the long aging time, the prosciutto loses more than half its weight and thereby its flavor is intensified.

  4. The consistent aging through to the middle is an artform and gives the prosciutto its special taste: Harmoniously mild with slightly-sweet notes, reminding aficionados of precious chestnuts.

  5. Only when the maturation test has been passed and the strictest quality criteria are met does this prosciutto get the Frierss’ seal of approval! Wherever you see Frierss, you know there is quality inside.
